  1. In a pestle and mortar crush the saffron threads, add 1 teaspoon of hot water just off the boil. Leave for 10 minutes to infuse.
  2. Put the flour on a clean surface, make a large hole in the middle and crack the eggs into it. Add the saffron and its liquid.
  3. Knead for about 10 minutes, until smooth, elastic and bouncy. Then wrap in cling film, and leave in the fridge for 1 hour.
  4. For the sauce, heat the oil in a small saucepan and when hot, add the garlic stirring until lightly golden. Tip into a sieve over a small bowl. Leave to cool
  5. Set up the pasta machine. Lightly flour the worktop. Cut the dough in two, and roll the dough until it is 1 cm in height.
  6. Roll one piece of the dough through the machine, twice on each setting, dusting with flour so it doesn't get stuck. Stop when you get to the penultimate setting. Repeat with the second piece of dough.
  7. Cut each piece of pasta in half widthways, so that you have 4 pieces of dough. Lay these out separately on a work surface dusting with flour as you go. With the shorter side of one sheet facing you, loosely roll it up. Then cut along its length into 1/2cm wide strips. Repeat with the remaining sheets. Then unravel the strips. Add flour so the strips don't stick together.
  8. Boil a large pan of salted water, and cook the pasta for 3 minutes. Drain, and save 100ml of the cooking water.
  9. Heat a tablespoon of the garlic oil in a large saute pan, add the chilli and celery and cook for 4 minutes until soft. Stir in the wine and grated tomato, cook for 2 minutes. Add the reserved pasta water, the pasta, herbs, tomatoes, a teaspoon of sea salt and a grind of pepper. Toss until the sauce covers the pasta.
    Off the heat, add the lemon juice, the remaining garlic oil, and sprinkle the fried garlic slices.
